• Explain the importance of temperature control
• Describe actions to prevent food poisoning and food contamination  
• List the principles of safe food storage  
• List the standards of personal food hygiene for food handlers  
• Explain how food legislation affects food handlers  
• Identify and list the controls for common pests in food   
• Explain the importance of cleaning and disinfecting premises  
• Identify the important features of well designed food premises
